Method
Preheat and prep
- Preheat the oven to 425°F, then place the flatbreads on a sheet pan. Brush the flatbreads with olive oil for a crisp, golden edge.
Assemble the flatbreads
- Arrange the brie slices over the flatbreads in an even layer. Let the brie cover most of the surface so it melts into pooling pockets.
- Dot the flatbreads with spoonfuls of whole berry cranberry sauce. Sprinkle the pecans and fresh rosemary evenly over the top for toasted, fragrant crunch.
Bake
- Bake at 425°F for 10-12 minutes until the brie is melted and the edges are crisp. Look for bubbling brie and lightly browned naan around the perimeter.
Finish and serve
- Top with baby arugula and drizzle with honey while the flatbreads are still warm. The greens should wilt slightly but stay bright.
- Cut the flatbread into squares and serve warm. Arrange pieces so the melted brie pools stay visible.
Notes
Pro tip: keep an eye on the last 2 minutes—naan can brown quickly at 425°F, while brie should look fully melted but not burnt. Store leftovers in an airtight container in the fridge for up to 2 days; reheat on a sheet pan at 375°F until warmed through. Freezing isn’t recommended due to arugula texture. Dietary swap: use lactose-free brie to keep the same melt-and-pull effect for lactose-free eating.
