Ingredients

Fresh cranberry base
  • 12 oz fresh cranberries
  • 0.75 cup sugar
  • 0.75 cup water
  • 0.25 cup orange juice
  • 0.25 tsp salt
Chocolate swirl
  • 3 oz dark chocolate (60-70%)
  • 1 tsp vanilla extract
  • 1 dark chocolate shavings for garnish

Equipment

  • 1 saucepan

Method

Simmer the cranberry sauce
  1. Bring sugar, water, and orange juice to a boil in a saucepan over medium-high heat, stirring until the sugar dissolves and the mixture looks clear. Keep the boil steady so the surface bubbles actively (around 212°F/100°C).
  2. Add fresh cranberries, then reduce to a simmer and cook for 10-12 minutes, stirring occasionally until berries burst and the sauce thickens. The sauce should cling to a spoon and look darker and glossy (about 190-205°F/88-96°C).
Melt in the chocolate
  1. Remove the saucepan from heat, then stir in chopped dark chocolate, vanilla extract, and salt until fully melted and glossy. Continue stirring until no chocolate streaks remain, and the color turns uniformly deep (about 160-180°F/70-82°C).
Chill and garnish
  1. Cool the sauce to room temperature for about 20 minutes, then chill in the refrigerator until set, at least 1 hour. It should thicken and look more spoonable after chilling (about 40°F/4°C).
  2. Spoon into a serving dish and top with dark chocolate shavings right before serving for a contrasting texture and color. Serve chilled or slightly softened depending on preference.

Notes

For the smoothest texture, stir the chocolate in right after removing from heat so it melts without seizing. Refrigerate in a covered container for up to 5 days; freeze up to 1 month (thaw overnight in the fridge). Dietary swap: use a sugar alternative that measures like sugar (or reduce sugar slightly and taste), keeping the simmer time the same so the cranberries still burst and thicken.
