Ingredients

Goat cheese appetizer base
  • 1 goat cheese log
  • 0.333 cup fig jam
  • 0.333 cup pecans, roughly chopped
  • 1 tbsp butter
  • 1 tbsp brown sugar
  • 1 tbsp honey
  • 1 tsp fresh rosemary, finely chopped
  • 0.125 flaky sea salt
  • 1 crackers and sliced pears for serving

Equipment

  • 1 sheet pan
  • 1 cast iron skillet

Method

Toast the candied pecans
  1. Melt the butter in a small skillet over medium heat; add the pecans and brown sugar. Stir until the sugar looks glossy and begins to coat the nuts.
  2. Toast for 3-4 minutes, stirring, until the pecans are fragrant and lightly candied. Spread onto parchment and let cool completely for crisp topping.
Assemble the goat cheese
  1. Place the goat cheese log on a serving board. Set it centered so the jam can run down the sides.
  2. Spoon the fig jam over the top, letting it run down the sides. Leave a thicker layer in the middle for a jammy pool.
  3. Scatter the candied pecans and finely chopped rosemary over the jam. Press lightly so the nuts and herbs adhere to the surface.
  4. Drizzle with honey and sprinkle with flaky sea salt. Serve immediately with crackers and sliced pears for dipping.

Notes

Pro tip: cool the pecans fully on parchment before topping so they stay crunchy against the creamy goat cheese. Refrigerate leftovers in an airtight container up to 3 days; serve cold or bring to room temperature for 20 minutes. Freezing is not recommended because the goat cheese texture can turn grainy. For a dairy-light option, use a plant-based goat-style spread instead of the goat cheese log.
