Method

Make the goat cheese spread
  1. Beat goat cheese, cream cheese, and milk until light and smooth, aiming for a creamy, lump-free texture.
  2. Spread the mixture into a shallow serving bowl and make a swirl in the center so the topping pools slightly.
Warm and drizzle the apricot honey
  1. Warm apricot preserves with honey for 20-30 seconds, then stir until loose and drizzle-ready.
  2. Spoon the apricot honey over the goat cheese, letting it flow into the center swirl.
Top and serve
  1. Top with dried apricots, pistachios, thyme leaves, and a pinch of flaky sea salt for color and crunch.
  2. Serve immediately with crackers or crostini around the bowl.

Notes

For the smoothest spread, make sure the goat cheese and cream cheese are fully softened before beating. Storage: cover and refrigerate up to 3 days; the flavor stays great, but you may need to re-stir or let sit 10 minutes at room temperature before serving. Freezing: no. Dietary swap: use lactose-free cream cheese and lactose-free goat cheese if you need dairy-friendly options.
