Method
Boil and cool the eggs
- Place the large eggs in a pot and cover with cold water, then bring to a boil. Cover the pot, remove from heat, and let the eggs stand for 12 minutes until set.
- Transfer eggs to an ice bath for 10 minutes to stop cooking. Peel and halve them lengthwise, keeping the whites intact and the yolks in a bowl.
Make the jalapeno filling
- Mash the yolks with mayonnaise, cream cheese, jalapeno brine, Dijon mustard, garlic powder, and salt until smooth and creamy. Mix thoroughly so no yolk lumps remain.
- Fold in the minced pickled jalapenos. Stir just until evenly distributed.
Fill and garnish
- Pipe the jalapeno filling into the egg whites. Fill each half generously so the top is slightly domed.
- Top each egg with a fresh jalapeno slice, bacon crumbles, and a dusting of chili powder. Serve with a visible pop of jalapeno on top.
Notes
For the cleanest deviled-eggs, pipe the filling right after mixing so it stays thick, and keep the halved whites chilled until assembly. Store in an airtight container in the refrigerator for up to 3 days (best within 24–48 hours); freeze not recommended because yolks can weep. For a lighter option, use light mayonnaise and light cream cheese for similar flavor with fewer calories.
