Ingredients

Roasted mushrooms
  • 1.5 lb cremini mushrooms Halved for even browning.
  • 3 tbsp olive oil Helps mushrooms brown and prevents sticking.
  • 4 cloves garlic Minced so it roasts quickly and stays fragrant.
  • 1 tbsp fresh thyme leaves Use fresh for the best aroma.
  • 0.5 tsp salt Seasoning to draw out moisture.
  • 0.25 tsp black pepper Add for warmth and balance.
  • 2 tbsp butter Stirs in at the garlic stage for a glossy finish.
  • 1 tbsp fresh lemon juice Brightens flavor right before serving.
  • 2 tbsp fresh parsley, chopped Fresh garnish for color and freshness.

Equipment

  • 1 sheet pan

Method

Roast the mushrooms
  1. Preheat oven to 425F with a rack in the center. Aim for a hot oven so the mushrooms start browning immediately.
  2. Toss cremini mushrooms with olive oil, salt, and black pepper until evenly coated. Spread in a single layer on a sheet pan so they roast instead of steam.
  3. Roast for 15 minutes, until the mushrooms release their liquid and begin to brown. Keep them in one layer for deep, even color.
  4. Add garlic, thyme, and butter, then toss to coat. Roast 8-10 minutes more until deeply golden, with visible caramelized edges.
  5. Drizzle with fresh lemon juice and sprinkle with chopped parsley, then serve hot. Look for a glossy finish and fragrant thyme-oven aroma.

Notes

For best browning, don’t crowd the mushrooms—use a large sheet pan or roast in two batches. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat on a sheet pan in a 425F oven for 5-8 minutes to re-crisp. Freezing isn’t recommended as the texture softens. If you want a dairy-free version, swap the butter for extra olive oil or a plant-based vegan butter with a similar melting profile.
