Prep the oven and bake the chops
- Preheat the oven to 400°F, then line a sheet pan with foil.
- Mix honey, soy sauce, and garlic until combined.
- Season the pork chops with salt and pepper on both sides.
- Brush the honey-soy mixture generously over each pork chop.
- Bake for 20–25 minutes until the internal temperature reaches 145°F, flipping and re-basting halfway through as the glaze caramelizes and turns shiny.
- Rest the pork chops for 3 minutes, then serve immediately.
Notes
Pro tip: start checking at 20 minutes—bone-in chops can vary, and the best texture happens when they hit 145°F just as the glaze turns glossy. Store leftovers in the fridge up to 3 days; reheat gently in a 300°F oven until warmed through. Freezing isn’t recommended for best glaze texture. Dietary swap: use tamari instead of soy sauce to make the glaze gluten-free.
