  • 0.75 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 0.25 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 0.25 cup apple cider, reduced to 1/4 cup over medium heat and cooled
Cinnamon sugar rolling
  • 3 tbsp sugar
  • 1 tsp cinnamon

Method
 

Reduce and cool the apple cider
  1. Reduce apple cider in a small saucepan over medium heat until thick and syrupy, then cool completely.
Mix and portion
  1. Preheat oven to 350F and line baking sheets with parchment (visual cue: parchment should lie flat).
  2. Whisk flour, baking soda, cinnamon, ginger, nutmeg, allspice, and salt until evenly combined.
  3. Beat butter and both sugars until light and fluffy, then add egg, vanilla, and reduced cider.
  4. Fold in flour mixture until no dry streaks remain.
  5. Scoop into 1-1/2 tablespoon balls, roll in cinnamon sugar, and place on the baking sheet with space between cookies.
Bake and cool
  1. Bake at 350F for 10-12 minutes until edges are set (visual cue: centers look slightly soft).
  2. Cool on pan 5 minutes before transferring, so cookies finish setting without breaking.
