Ingredients

Apple filling
  • 6 large apples Granny Smith + Honeycrisp, peeled and sliced
  • 0.3333333333 cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tsp cinnamon
  • 0.25 tsp nutmeg
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
Oat crumble topping
  • 1.5 cup rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar packed
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.75 cup cold unsalted butter cubed
  • 1 vanilla ice cream for serving

Equipment

  • 1 sheet pan

Method

Preheat and fill
  1. Preheat oven to 375F and grease a 9x13 baking dish.
  2. Toss sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice, then spread in the prepared dish.
Make crumble and bake
  1. Combine rolled oats, all-purpose flour, brown sugar, cinnamon, and salt, then cut in cold butter until large chunky clumps form.
  2. Scatter crumble evenly over the apples.
  3. Bake 40-45 minutes, until the topping is deeply golden and the apple filling bubbles.
Rest and serve
  1. Rest 10 minutes so the filling thickens.
  2. Serve warm with vanilla ice cream.

Notes

For the crispest edges, keep the butter cold while making the crumble and avoid overmixing until powdery. Store covered in the refrigerator up to 4 days; reheat portions in the oven or microwave until warm. Freezing is not recommended because the crumble topping softens after thawing. For a lighter option, swap half the butter for additional oats (texture changes but still bakes up well).
