Method
Make and bake the crust
- Preheat the oven to 325F. Press the crust mixture into a 9-inch springform pan.
- Bake the crust at 325F for 10 minutes, until fragrant and lightly set. Let it cool slightly while you prepare the apple layer.
Cook the apple pie layer
- Cook the apples with brown sugar, cinnamon, nutmeg, cornstarch, and butter over heat until the mixture thickens. Cool the thickened apple layer completely.
Assemble the cheesecake
- Beat the cream cheese with sugar until smooth. Beat in the eggs one at a time, then mix in sour cream, vanilla, and cinnamon until combined.
- Pour the cheesecake batter over the baked crust. Spread the cooled apple layer over the cheesecake in an even layer.
- Scatter the streusel topping over the apple layer. Wrap the pan so it’s suitable for a water bath.
Bake in a water bath, then chill
- Bake in a water bath at 325F for 65-70 minutes until the cheesecake is just set. Cool to room temperature.
- Refrigerate the cheesecake for 6 hours to fully chill and set. Slice and serve cold.
Serve
- Drizzle caramel sauce over each slice right before serving. Serve for clean, defined layers.
Notes
For the smoothest texture, keep the batter well-mixed but avoid overbeating once the eggs are added. Use a water bath so the edges don’t overcook, and cool the cheesecake fully before chilling for tight slices. Refrigerate leftovers up to 5 days; freeze slices up to 2 months (wrap tightly). For a lighter option, use reduced-fat cream cheese and sour cream—texture may be slightly softer but still works.
