Prep and season
- Pat the pork chops completely dry, removing any surface moisture for a crispy crust.
- In a bowl, mix garlic powder, smoked paprika, dried Italian seasoning, onion powder, brown sugar, salt, and black pepper.
- Brush the pork chops with olive oil, then rub the spice mixture firmly over both sides.
Air fry
- Preheat the air fryer to 400°F for 3 minutes.
- Air fry the pork chops for 10–12 minutes at 400°F, flipping halfway through, until the internal temperature reaches 145°F and the crust is deeply golden.
Rest and serve
- Rest the pork chops for 3 minutes, then serve with lemon wedges.
Notes
Key pro tip: dry the pork chops very thoroughly and don’t skip preheating—this helps the seasoning set into a deeply golden crust. Store leftovers in the refrigerator up to 3 days; reheat in the air fryer at 375°F for 3–5 minutes until warmed through. Freezing is not recommended for best texture. Dietary swap: use a sugar substitute (brown-sugar blend) if you want to reduce added sugar while keeping the same crust coating.
