Ingredients

Chicken and soup base
  • 1.5 lb chicken breasts Boneless, skinless; added raw.
  • 1 can (15 oz) black beans Drained.
  • 1 can (15 oz) corn Drained.
  • 1 can (10 oz) Rotel tomatoes
  • 1 can (14 oz) diced tomatoes
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) ranch dressing mix
  • 4 cup chicken broth
  • 8 oz cream cheese Cubed.
Finish and toppings
  • 0.5 cup heavy cream Added at end.
  • shredded cheddar For topping.
  • sour cream For topping.
  • tortilla chips For serving.
  • jalapeños For topping.
  • cilantro For topping.
  • salt Season to taste.
  • black pepper Season to taste.

Equipment

  • 1 Crockpot

Method

Add ingredients to the slow cooker
  1. Place the raw chicken breasts, black beans, corn, Rotel tomatoes, diced tomatoes, taco seasoning, ranch dressing mix, chicken broth, and cubed cream cheese in the crockpot. Stir everything except the chicken so the cream cheese starts breaking up around it.
Cook until chicken is tender
  1. Cover and cook on Low for 6-8 hours (or High for 3-4 hours) until the chicken is fully cooked and easily shred-ready. Keep the lid on so the soup stays at a steady simmer.
Shred and finish the soup
  1. Remove the chicken breasts to a plate and shred with two forks. Return the shredded chicken to the soup.
  2. Stir until the cream cheese is completely melted and incorporated, then pour in the heavy cream and stir to combine. The broth should look smooth and cream-swirl thick.
  3. Season with salt and black pepper to taste. Serve hot with shredded cheddar, sour cream, and tortilla chips, and top with jalapeños and cilantro if using.

Notes

For best texture, shred the chicken while it’s hot so it falls into tender bite-size pieces. Store leftovers in an airtight container in the fridge for 3-4 days; reheat gently on the stove or in the microwave until warmed through. Freezing is not recommended because the creamy base can break after thawing. For a lighter option, use reduced-fat cream cheese and half-and-half instead of heavy cream, and expect a slightly thinner soup.
