  • 2 lb flank steak slice thin against the grain
Garlic butter honey BBQ glaze
  • 6 tbsp butter 2 tbsp for searing, remaining for garlic
  • 8 garlic cloves minced
  • 0.5 cup BBQ sauce
  • 3 tbsp honey
  • 2 tbsp lime juice
  • 1 tsp smoked paprika
  • 1 salt to taste
  • 1 black pepper to taste
Taco assembly
  • 8 flour tortillas warm before filling
  • 1 fresh cilantro diced, for serving
  • 1 diced onion for topping
  • 1 lime wedges for serving
  • 1 tbsp lime juice for a final squeeze (if needed)

Method
 

Sear the beef
  1. Heat 2 tablespoons butter in a large skillet over high heat. Season flank steak with salt, pepper, and smoked paprika.
  2. Cook beef in batches for 3-4 minutes until browned. Transfer to a plate while you finish the rest.
Make caramelized honey BBQ glaze
  1. Add the remaining butter and minced garlic to the skillet and sauté for 1 minute until fragrant. Return beef to the skillet.
  2. Add BBQ sauce, honey, and lime juice, then toss to coat. Cook for 3-4 minutes until caramelized, glossy, and clinging to the beef.
Warm tortillas and assemble tacos
  1. Warm flour tortillas in a dry skillet or directly over a gas flame. Keep them pliable for filling.
  2. Fill tortillas with garlic butter honey BBQ beef and top with fresh cilantro and diced onion. Finish with a squeeze of lime juice and serve hot.

Pro tip: slice the flank steak thin against the grain for quick browning and easy chewing. Refrigerate leftovers in an airtight container up to 3 days; rewarm beef gently in a skillet with a splash of BBQ sauce or water so the glaze stays glossy. Freezing is not recommended because the honey BBQ glaze can lose texture when thawed. For a lighter option, use half the butter and choose reduced-sugar BBQ sauce.
