Simmer the ginger-peach base
- Combine diced peaches, sugar, water, and ginger in a saucepan over medium heat; simmer for 15 minutes until the peaches are very soft.
Strain and cool
- Strain through a fine mesh sieve, pressing to extract all liquid, then cool completely.
Mix and adjust
- Combine the ginger-peach syrup with fresh lemon juice and cold water, stirring well and adjusting sweetness or tartness to taste.
Serve
- Fill glasses with ice and pour the lemonade over.
- Garnish with fresh peach slices, mint, and a sliver of candied ginger on the rim.
Notes
Pro tip: press firmly through the fine mesh sieve to capture all the peach pulp for a thicker, more golden lemonade. Store covered in the refrigerator up to 3 days; freeze is not recommended because fresh lemon can lose brightness after thawing. For a lighter option, reduce the sugar to 3/4 cup and add a bit more to taste after mixing with lemon juice.
