Ingredients

Rice Krispies cereal
  • 6 cup Rice Krispies cereal
Gingerbread base
  • 4 tbsp unsalted butter
  • 0.3333333333 cup molasses
  • 10 oz mini marshmallows
Gingerbread spices
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 0.5 tsp cloves
  • 0.25 tsp nutmeg
  • 0.25 tsp allspice
Finishing
  • 1 tsp vanilla extract
  • 0.5 cup white chocolate chips for drizzle
  • 0.1 flaky salt for topping Use as needed to finish.

Equipment

  • 1 sheet pan

Method

Prep the pan
  1. Generously butter a 9x13 pan so the treats release cleanly after setting.
Make the gingerbread marshmallow mixture
  1. Melt the butter in a large pot over medium-low heat, then add the molasses and stir until smooth.
  2. Add the cinnamon, ginger, cloves, nutmeg, and allspice, and stir for 1 minute to bloom the spices.
  3. Add the mini marshmallows and stir constantly until completely melted and glossy.
  4. Remove from heat, stir in the vanilla, then add Rice Krispies cereal and mix until every flake is evenly coated.
Set and finish
  1. Press the mixture firmly into the prepared pan and smooth the top with steady pressure.
  2. Melt the white chocolate and drizzle over the top, then sprinkle with flaky salt before it sets.
  3. Let the treats set for 30 minutes before cutting into bars.

Notes

Pro tip: stir continuously once the marshmallows go in so they melt evenly without scorching. Store airtight at room temperature up to 3 days or in the fridge up to 5 days; freeze up to 2 months (wrap well and drizzle with fresh white chocolate after thawing if desired). For a lower-sugar option, use reduced-sugar marshmallows and reduce the white chocolate drizzle slightly.
