Marinate the chicken
- Whisk together olive oil, lemon juice, lemon zest, garlic, dried oregano, smoked paprika, salt, and pepper until evenly combined. Marinate chicken for at least 30 minutes (up to 2 hours) so the flavors soak in and the surface looks glossy.
Roast with lemons, tomatoes, and olives

Finish and serve
