Green Bean Bundles

Green Bean Bundles with bacon are baked until crisp, then glazed with a sticky brown sugar garlic butter. Fresh green beans are blanched briefly and bundled, so they stay bright green with a tender-crisp bite.

Ingredients

Green Bean Bundles
  • 1.5 lb fresh green beans Trimmed.
  • 8 bacon Halved crosswise.
  • 0.25 cup butter Melted.
  • 0.33 cup brown sugar
  • 2 garlic Minced.
  • 1 tbsp soy sauce
  • 0.25 tsp black pepper

Equipment

  • 1 sheet pan

Method

Blanch and prep the beans
  1. Preheat oven to 400F. Blanch green beans in boiling water for 3 minutes, then plunge into ice water and drain to lock in the bright color.
Bundle with bacon
  1. Gather 8-10 green beans into a bundle and wrap with a half slice of bacon, seam-side down in a baking dish so the bacon stays in place while baking.
Make the glaze
  1. Whisk melted butter, brown sugar, garlic, soy sauce, and black pepper until smooth and pourable, with the sugar visibly dissolved.
Bake and finish
  1. Pour the glaze evenly over the bundles. Bake for 25-30 minutes at 400F until the bacon is crisp and the glaze is bubbly, with a glossy sheen.
  2. Spoon pan glaze over the bundles and serve warm for the best sticky coating.

Notes

For the cleanest bundles, keep them roughly the same size (about 8-10 beans each) so they bake evenly. Refrigerate leftovers in a sealed container for up to 3 days; reheat in a 350F oven until warmed through and crisp the bacon again. Freezing isn’t recommended because the green beans can soften after thawing. If you want a lower-sodium option, use low-sodium soy sauce and check your bacon label.
