Season the chicken
- Mix lemon zest, cracked black pepper, garlic powder, onion powder, and salt in a small bowl until evenly combined, leaving the pepper visibly speckled. Rub the mixture generously over both sides of each chicken breast so the crust looks thick and coated.
Sear the breasts
- Heat olive oil in a large skillet over medium-high heat until shimmering, then place chicken breasts in the pan in a single layer. Sear for 5-6 minutes per side until the outside is golden and the internal temperature reaches 165°F, then remove to a plate.
Make the lemon butter sauce
- Melt butter in the same pan over medium heat until it foams lightly, then add minced garlic and cook for 1 minute while stirring. Stir in fresh lemon juice and lemon zest and simmer briefly, about 30-60 seconds, until the sauce turns glossy and fragrant.
Finish and serve
- Return the chicken to the pan and spoon the lemon butter sauce over each breast until the tops look lacquered and shiny. Garnish with fresh parsley and lemon slices, then serve immediately for the best texture.
Notes
For the best crust, pat the chicken dry before seasoning so the lemon pepper blend clings. Store leftovers in an airtight container in the refrigerator up to 3 days; reheat gently in a skillet over low heat until warmed through. Freezing is not recommended for best sauce and texture. For a lighter option, use 2 tbsp olive oil plus a reduced amount of butter (or plant-based butter) for the sauce.
