Ingredients

goat cheese log (chilled)
  • 10 oz goat cheese log, chilled
cream base
  • 4 oz cream cheese, softened Bring to room temperature for smooth mixing.
bacon coating
  • 6 slice bacon, cooked crisp and finely chopped Use finely chopped bacon so it sticks when rolling.
nuts and fruit
  • 0.33 cup pecans, toasted and finely chopped Toast for 3–5 minutes if they aren’t already toasted.
dried cranberries
  • 0.25 cup dried cranberries, chopped
fresh herbs
  • 1 tbsp fresh chives, chopped
honey finish
  • 2 tbsp hot honey or regular honey Warm slightly if you want a thinner drizzle.
serving
  • 1 Crackers for serving Serve alongside for spreading or scooping.

Method

Make and shape the log
  1. Beat goat cheese log and cream cheese until smooth, then shape into a log.
  2. Wrap the log in plastic wrap and chill for 30 minutes until firm.
Coat and finish
  1. Combine bacon, pecans, cranberries, and chives on a plate.
  2. Roll the chilled log in the mixture, pressing to coat on all sides.
  3. Transfer to a serving board and drizzle with honey.
  4. Serve with crackers.

Notes

Pro tip: press the log firmly while rolling so bacon-nut-cranberry bits adhere, then keep it chilled until serving. Store covered in the refrigerator up to 3 days; freeze yes (up to 1 month) though coating may soften slightly. For a dairy-light swap, use part-skim cream cheese (texture may be slightly softer).
