  • 2 oz bourbon
  • 1 ripe peach Half sliced for muddling, half for garnish.
  • 6 fresh mint leaves Plus a sprig for garnish.
  • 1 tbsp honey or simple syrup
  • 1 oz fresh lemon juice
  • 1 crushed ice
  • 1 sparkling water (optional) Splash, if desired.

Method
 

Muddle the peach-mint base
  1. Place peach slices, mint leaves, and honey in a cocktail shaker or glass and muddle firmly until the peach releases its juice and the mint is fragrant. Visual cue: the peach should look bruised and glossy, with mint-green aroma.
Shake and chill
  1. Add bourbon, lemon juice, and a handful of ice to the shaker. Visual cue: liquid should turn amber and pale-gold as everything combines.
  2. Shake vigorously for 15 seconds until well chilled. Visual cue: the shaker should feel frosty and the drink should look cloudy from the fruit and mint.
Assemble over crushed ice
  1. Fill a lowball glass with crushed ice. Visual cue: the glass should be packed full with uneven, crunchy ice peaks.
  2. Strain the cocktail over the crushed ice (or pour unstrained for a more rustic style). Visual cue: amber liquid should cascade over the ice with visible peach flecks if unstrained.
