  • 4 cup fresh peaches, peeled and diced
Sweet and tang
  • 1 cup brown sugar, packed
  • 1 cup apple cider vinegar

Method
 

Simmer the peach base
  1. Combine the diced fresh peaches, brown sugar, and apple cider vinegar in a medium saucepan and bring to a simmer over medium heat, stirring to dissolve sugar. Cook until the mixture starts bubbling consistently, about 5 minutes, with peaches beginning to soften.
  2. Add the finely diced small red onion, minced garlic, grated fresh ginger, cinnamon, cumin, cloves, cayenne pepper, and salt, then stir to combine. Continue simmering over medium heat until the chutney looks evenly spiced, about 10 minutes, with the sauce taking on a warmer amber color.
  3. Simmer for 30-35 minutes total, stirring frequently, until the chutney thickens and most of the liquid has evaporated. Look for chunky peaches suspended in a glossy syrup that coats the spoon, with minimal pooling at the bottom.
  4. If using, stir in the golden raisins and simmer for the last 10 minutes. The raisins should plump and spread throughout, creating small bursts of sweetness in the sauce.
Jar and chill
  1. Cool the chutney to room temperature, uncovered until steam subsides and the texture stays thick. The surface should look glossy and set, not watery.
  2. Transfer to jars and refrigerate. Chill at refrigerator temperature so it thickens further, then use as desired.
Serve
  1. Serve the peach chutney with cheese boards, grilled meats, sandwiches, or curries. Spoon it straight from the jar so you get chunky peach pieces with spiced syrup clinging to them.
