Ingredients

Pumpkin dough
  • 0.75 cup warm milk
  • 2.25 tsp active dry yeast
  • 0.25 cup sugar
  • 0.3333333333 cup butter, melted
  • 0.5 cup pumpkin puree
  • 1 egg
  • 1 egg yolk
  • 4 cup flour
  • 1 tsp pumpkin pie spice
  • 1 tsp salt
Filling
  • 0.5 cup butter, softened
  • 0.6666666667 cup brown sugar
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice
Coffee maple frosting
  • 4 oz cream cheese
  • 2 tbsp butter
  • 3 tbsp pure maple syrup
  • 1 tbsp strong coffee
  • 2 cup powdered sugar

Equipment

  • 1 sheet pan
  • 1 stand mixer

Method

Activate yeast and build the dough
  1. Warm the milk and activate the yeast in it, then stir in the sugar, melted butter, pumpkin puree, and eggs until smooth. Let it sit until foamy for a clear, active yeast start.
  2. Mix in the flour, pumpkin pie spice, and salt, then knead until the dough is smooth and elastic, about 8 minutes. If using a stand mixer, keep the dough moving continuously for even gluten development.
  3. Cover the dough and let it rise for 1 hour at room temperature (or until doubled in size). The dough should look puffy with a noticeably increased volume.
Roll, fill, and proof
  1. Roll the dough into a 12x18 inch rectangle, pressing out any thick seams so it rolls evenly. Aim for a uniform thickness so the swirl bakes consistently.
  2. Spread the softened butter over the dough, then sprinkle with brown sugar, cinnamon, and pumpkin pie spice. Leave a small border so the filling stays inside as you roll.
  3. Roll the dough up tightly from one long edge to the other to form a log. Tight rolling helps keep the cinnamon swirl defined in each roll.
  4. Cut the log into 12 rolls and place them in a baking dish or on a sheet pan. Keep the cut sides up so the centers rise well.
  5. Cover and let the rolls rise for 45 minutes until visibly puffed. They should feel lighter and look taller even before baking.
Bake and frost
  1. Bake at 375°F for 22 to 25 minutes, until the tops are lightly golden. The finished rolls should look set and spring back gently.
  2. Beat the cream cheese and butter smooth, then mix in the maple syrup, strong coffee, and powdered sugar until glossy. Drizzle the frosting over warm rolls for the best melt and shine, using a quick back-and-forth motion.

Notes

Pro tip: For cleaner slices, chill the log for 10 minutes before cutting—this reduces smearing and keeps the swirl distinct. Store leftover rolls covered in the refrigerator for up to 3 days; rewarm in the microwave in 15-second bursts. Freezing is yes for baked rolls (freeze frosted or unfrosted); thaw overnight in the fridge and warm before serving. For a dairy-light option, use plant-based butter and cream cheese alternatives in the frosting if desired.
