Prep and preheat
- Preheat oven to 375F and line baking sheets with parchment.
- Whisk all-purpose flour, baking soda, and salt in a mixing bowl until evenly combined.
Make the dough
- Beat softened unsalted butter with granulated sugar and brown sugar until light and fluffy, then beat in eggs, vanilla extract, and caramel extract if using.
- Fold the flour mixture into the wet ingredients just until no dry streaks remain.
- Fold in toffee bits and soft caramel pieces or caramel chips.
Bake and finish
- Scoop dough into 2-tablespoon rounds and bake 10-12 minutes until golden at the edges.
- Immediately press extra toffee bits and caramels on top while the cookies are hot.
- Sprinkle generously with flaky sea salt, then cool on the pan for 5 minutes.
Notes
For the best caramel pools, press the extra toffee/caramel on immediately right after the tray comes out. Store cookies in an airtight container at room temperature for 3-4 days; freeze baked cookies up to 2 months. For a lighter option, you can substitute half the butter with plain Greek yogurt (texture will be slightly softer).
