Season and sear the pork
- Season the pork chops with salt, pepper, and garlic powder.
- Heat the oil in a large skillet over medium-high heat and sear the chops for 4 minutes per side until golden; set aside.
Simmer the BBQ pineapple sauce
- In the same pan, sauté the garlic for 30 seconds.
- Stir in the BBQ sauce, pineapple juice, brown sugar, and soy sauce, then simmer for 3 minutes until slightly thickened and bubbling.
Caramelize pineapple and finish
- Add the pineapple rings and cook for 2 minutes per side until caramelized and glossy.
- Return the pork chops to the pan, spoon the sauce over them, and simmer for 3–4 minutes until cooked through.
- Garnish with green onions and serve.
Notes
To keep the chops juicy, let them rest for 2 minutes after simmering and spoon sauce over during the last 1 minute. Refrigerate leftovers in a sealed container up to 3 days; reheat gently in a skillet over medium-low. Freezing is not recommended because the pineapple sauce can break. For a lower-sugar option, use a reduced-sugar BBQ sauce and reduce the brown sugar to 2 teaspoons.
