Season and sear the chicken
- Season the chicken breasts generously with salt, pepper, garlic powder, and dried thyme. Over medium-high heat, heat olive oil in a large skillet.
- Sear the chicken for 5-6 minutes per side until golden and cooked through to 165°F, pressing only as needed for contact. When done, remove the chicken to a plate, keeping any drippings in the skillet.
Build the mushroom and wine sauce
- Melt the butter in the same pan. Add sliced cremini mushrooms and cook over medium-high heat for 5-6 minutes until deeply golden, scraping any browned bits as they loosen.
- Add the minced garlic and cook for 1 minute until fragrant. Pour in the dry red wine (or white wine) and deglaze, scraping up all browned bits from the bottom.
- Simmer the wine for 3 minutes to reduce slightly and deepen the flavor. Add chicken broth, heavy cream, Dijon mustard, and fresh thyme leaves.
- Simmer for 5-6 minutes until the sauce thickens and looks dark and glossy. If it bubbles too aggressively, lower the heat slightly to keep it simmering.
Finish and serve
- Return the chicken breasts to the pan and spoon the sauce over each breast to coat. Garnish with fresh thyme sprigs and serve immediately while the sauce clings to the chicken.
Notes
Pro tip: ensure the skillet is hot before searing so the chicken forms a strong golden crust; avoid moving the breasts until they release easily. Store leftovers in an airtight container in the fridge up to 3 days and reheat gently on the stove or in the microwave. Freezing is not recommended because the cream sauce can break after thawing. If you want a lighter option, swap heavy cream for half-and-half and simmer 1-2 minutes longer to help it thicken.
