Method
 

Prep the baking dish and oven
  1. Preheat the oven to 375°F and grease a 9x13 baking dish. The oven should be fully heated before chicken goes in.
Season and arrange the chicken
  1. Season the chicken breasts with salt, pepper, garlic powder, and smoked paprika, then place them in the prepared baking dish. Arrange them in a single layer so the topping covers evenly.
Make the sour cream mixture
  1. Whisk together sour cream, mayonnaise, ranch seasoning mix, and garlic powder until smooth. Stop when the mixture looks uniform with no dry seasoning pockets.
Smother and top
  1. Spread the sour cream mixture generously over each chicken breast. Use enough to cover the surface so the topping bakes into a thick layer.
  2. Top with shredded cheddar, Parmesan, and crumbled bacon. Distribute evenly so every bite has cheese and bacon.
Bake
  1. Bake at 375°F for 28-32 minutes, until the topping is golden and bubbly and the internal temperature reaches 165°F. Look for a caramelized, browned crust across the top and edges.
  2. Garnish with fresh chives right after baking. The bright green finish adds fresh flavor contrast to the rich crust.

Notes

For the best melt and crust, keep the chicken in a single layer and fully cover each breast with the sour cream mixture before adding the cheeses and bacon. Refrigerate leftovers in an airtight container for up to 3-4 days; freeze is not recommended for the topping texture. For a lighter option, swap mayonnaise for light mayonnaise and use reduced-fat sour cream (the bake still stays tangy and bubbly).
