Ingredients
Method
Simmer the spiced cider
- In a saucepan, simmer apple cider with cinnamon sticks, star anise, whole cloves, and brown sugar for 10 minutes, keeping it at a gentle simmer. A fragrant spice aroma should fill the kitchen as the cider darkens slightly.
Strain and chill
- Strain the spiced cider through a fine sieve, discarding the solids, then chill completely until cold. The syrupy liquid should be fully cooled before mixing with prosecco.
Rim the flutes
- Rim tall champagne flutes with cinnamon sugar, coating the edge evenly. The rims should look speckled and slightly thicker with sugar.
Build and serve
- Add 2 tablespoons of spiced cider to each flute. You should see a warm-spiced base pooling at the bottom of the glass.
- Top each flute with chilled prosecco, then garnish with an apple slice and serve immediately. The drink should appear golden and sparkling with apple floating near the top.
Notes
Pro tip: fully chill the spiced cider (and the prosecco) so the bubbles stay lively and the flavor reads clean rather than diluted. Store the strained spiced cider in the refrigerator for up to 5 days; freeze for up to 2 months, then thaw in the fridge. For a lighter option, use a lower-sugar prosecco and cut the spiced cider to 1 tbsp per flute for a less sweet finish.
