Ingredients
  

Fruit salad base
  • 4 peaches Ripe, peeled and sliced.
  • 2 cup strawberries Hulled and halved.
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup cherries Pitted.
Honey-lime dressing
  • 3 tbsp honey
  • 2 tbsp lime juice Fresh lime juice.
  • 1 tsp lime zest Freshly zested.
  • 1 fresh mint leaves For garnish.

Method
 

Combine the fruit
  1. Add the peaches, strawberries, blueberries, raspberries, and cherries to a large bowl.
  2. Gently toss the fruit just to distribute the pieces evenly.
Make and add the dressing
  1. Whisk the honey, lime juice, and lime zest together until combined.
  2. Pour the dressing over the fruit and toss gently to coat.
Macerate and serve
  1. Let the salad sit for 15 minutes at room temperature to macerate in the dressing, then give it one last gentle toss.
  2. Top with fresh mint leaves and serve immediately for the best texture on the day it's made.

Notes

Pro tip: use ripe peaches and handle the berries gently so they hold their shape during tossing. Store covered in the refrigerator up to 1 day; the fruit will release more juice as it sits. Freezing is not recommended because berries can turn mushy after thawing. If you want a lighter version, swap honey for maple syrup (use the same amount) to keep the honey-lime flavor profile while reducing overall sweetness.
