  • 2 tbsp Jack Daniel's whiskey or chicken broth for deglazing Use whiskey for deeper flavor or swap broth for no-alcohol.
Cheese and garnish
  • 8 Monterey Jack cheese Lay cheese slices on top so they melt and brown under the broiler.
  • 1 Fresh parsley for garnish Finishing garnish for color and brightness.

Method
 

Sear the chicken
  1. Season the chicken breasts generously with Cajun seasoning. Heat olive oil in an oven-safe skillet over medium-high heat and sear the chicken for 5-6 minutes per side until golden and the internal temperature reaches 165°F, then remove to a plate.
Caramelize onions
  1. Melt the butter in the same pan. Cook the thinly sliced onions over medium heat for 8-10 minutes until deeply caramelized.
Sauté mushrooms and deglaze
  1. Add sliced mushrooms and minced garlic, then cook for 4-5 minutes until golden. Deglaze with Jack Daniel's whiskey or chicken broth, then season with salt and pepper to taste.
Smother and melt the cheese
  1. Return the chicken breasts to the pan and top each breast with the mushroom and onion mixture. Lay 2 slices of Monterey Jack cheese over the top of each breast.
Broil to bubbly golden cheese
  1. Broil the skillet for 2-3 minutes until the cheese is melted, bubbly, and golden. Garnish with fresh parsley and serve immediately.
