Method

Warm the beans and thicken the sauce
  1. Add butter beans to the simmering sauce and cook for 8-10 minutes, stirring occasionally, until the sauce thickens slightly and the beans are heated through.
Finish with spinach and parmesan
  1. Stir in the baby spinach and cook for 2-3 minutes, just until wilted and bright green.
  2. Stir in the parmesan and season generously with salt and pepper until the sauce looks smooth and lightly thickened.
