Firecracker Chicken

Firecracker chicken is crispy golden chicken bites caramelized in a vivid red-orange, sticky firecracker sauce studded with red pepper flakes. The coating clings to every piece after quick frying and a brief caramelizing toss, delivering sweet heat chicken texture you’d expect from takeout-style Asian spicy chicken.

  • 2 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 0.5 tsp red pepper flakes use 1 teaspoon for hotter
  • sesame seeds for garnish
  • green onions sliced, for garnish

Equipment

  • 1 cast iron skillet

Method

Coat the chicken
  1. Toss the chicken with cornstarch, flour, salt, pepper, and garlic powder until every piece is coated.
  2. Let the coated chicken rest for 20 minutes to lightly hydrate the coating before frying.
Fry until golden and cooked through
  1. Heat vegetable oil in a cast iron skillet to 375°F, then fry the chicken in about 1/2 inch of oil.
  2. Fry for 3-4 minutes per side until the bites are golden and cooked through, then drain.
Make the firecracker sauce
  1. Combine hot sauce, brown sugar, butter, apple cider vinegar, soy sauce, garlic powder, and red pepper flakes in a saucepan over medium heat.
  2. Stir until the butter melts and the sauce becomes smooth and glossy, about 2-3 minutes.
Caramelize and serve
  1. Toss the crispy chicken in the firecracker sauce until fully coated, using a glossy sticky layer as a visual cue.
  2. Return the coated chicken to the pan for 1-2 minutes to caramelize lightly.
  3. Serve over steamed rice and top with sesame seeds and sliced green onions.

Notes

For extra crisp bites, make sure the oil stays close to 375°F and drain on a wire rack if possible. Refrigerate leftovers in a sealed container for up to 3 days; reheat in a hot oven or air fryer to re-crisp before saucing if desired (best texture). Freezing: yes, but sauce may dull on thaw—freeze chicken without the sauce if you want the crispiest future reheat. Dietary swap: use gluten-free flour and tamari instead of soy sauce for a gluten-free version.
